Creamy Potato and Kale Soup

Hey guys! Today I have a super simple soup recipe that is so yummy. Before I went vegan I loved to order the Zuppa Toscana from Olive Garden so that inspired me to make this recipe. It’s great to make in bulk and save it for a busy school week. There is no dairy so it will last in the fridge for a few days. I personally like to eat this soup with some sort of baked bread on the side to dip in, it’s the perfect sidekick. Happy cooking, friends!
